Ferme Neuve

La Ferme Apicole Desrochers, a beekeeping farm, is first and foremost a meeting point where a mountain and river exist in symbiosis. A region called Ferme-Neuve. In 1978, Marie-Claude Dupuis and Claude Desrochers began caring for their first beehive. Since then, the new generations continue to produce their mead, or honey wine, with a grand respect for the bees who offer their indispensable honey.

The Hautes-Laurentides is driven by a nordic climate and fosters a robust and authentic ecosystem. Vast fields of wildflowers and forestlands offer the bees a splendid playfield. The cleanliness of the air and water found in this region serves as inspiration to replenish and protect the beauty of the land and the ancestral heritage it holds.

Natural fermentation, expression of seasonal honeys, aging on fine lees, aging in barrels.

Sparkling Mead "Beezz de Lait"
375ml 5% ABV w/ hops & whey

Sparkling mead with whey made from raw organic summer honey (Miels d'AnicetTM), Organic product certified by Ecocert Canada.

Use of organic hops (Houblons Franklin) and whey (Fromagerie Le p'tit train du nord). Partial bittering hopping, Aromatic hopping with noble hops, partial substitution of water with whey.
Unfiltered.

Sparkling Mead "Beezz IP"
375ml 5% ABV macerated w/ hops

Made from raw organic buckwheat and wild flower honey (Miels d'AnicetTM).
Organic product certified by Ecocert Canada.
Use of cone hops (Cascade, Centennial, Chinook, Brewer's Gold, Galena...).
Bittering hopping of IPA type.
Aromatic hopping and during cooling.
Unfiltered.

 

Nordic honey wine “Or la Loi”
500 ml, 20% ABV

Made from raw organic spring, fall and buckwheat honey (Miels d'AnicetTM).
Organic product certified by Ecocert Canada. Cold concentration between -15°C and -30°C of Cuvée de la Diable after 3 years aging in barrels. Unfiltered.

Semi-dry honey wine “BLIZZ”
750ml, 12% ABV

Made from raw organic linden honey (Miels d'AnicetTM). Organic product certified by Ecocert Canada.

Slow & cold maceration of water and honey.Natural fermentation on pollen leaven, partially in oak barrels.
Aged on fine lees in stainless steel tanks for 12 to 18 months.
